Description

The main base of the first course is the famous sfoglia (flat pasta made of eggs, flour, oil and salt) from which tagliolini, tagliatelle, cappelletti and tortelli are made. One of the most typical and appreciated pasta dishes is passatelli in brodo: a unique dish in which the passatelli are made from dough with egg, cheese, grated stale bread and nutmeg, and formed using a special utensil with holes.
